Raspberry Lemonade Cake Veg 60 Mins Nancy Kamerer Instructions 1. Heat olive oil in a large pot over medium heat. Add chopped onion, carrot, celery, seasonal vegetables, and a pinch of salt. Cook, stirring often, until the onion is translucent (6-8 minutes). 2. Add garlic and thyme, cook for 1 minute. Add diced tomatoes with juices and cook for a few more minutes, stirring often. 3. Add quinoa, broth, water, 1 tsp salt, 2 bay leaves, and a pinch of red pepper üakes. Season with black pepper. Bring to a boil, then partially cover and simmer gently. 4. Cook for 25 minutes. Remove the lid, add beans and chopped greens, and simmer for 5 more minutes until greens are softened. 5. Remove from heat, discard bay leaves, and stir in 1 tsp lemon juice.
